Roasted Parmesan Green Beans

Ingredients

1 lb. fresh green beans

2 Tbsp olive oil

2 Tbsp shredded or grated parmesan cheese

2 Tbsp gluten-free panko breadcrumbs

1/2 teaspoon salt

1/4 teaspoon garlic powder

3/4 cup slivered almonds

Handful flat leaf parsley, chopped

Instructions

1. Preheat oven to 400° F.

2. Combine all ingredients in a large mixing bowl and toss to coat.

3. Spread the green bean mixture on a large, rimmed baking sheet.

4. Roast for 15-20 minutes, stirring halfway through.  Sprinkle the parsley over the top for the last 3 minutes.

5. Enjoy!
