Buckwheat with Mushrooms


1 cup uncooked buckwheat

2 cup water

16 oz mushrooms

1 medium onion

1 cup green onions, diced

3 Tbsp unsalted butter

Sea salt and ground pepper to taste


  1. Bring water to boil. Add buckwheat and salt to salt, cook on low for 20-25 minutes.
  2. Heat a pan over medium heat and add butter and onions. Add diced mushrooms and cook until golden brown.
  3. Combine mushroom mixture with buckwheat and let it sit for about 5 minutes to allow flavors to come together.
  4. Add green onions and stir to combine everything together. Serve right away.
